Let’s just get this out of the way, this isn’t a pinacle of health kind of trail mix. This is a sweet/salty pick me up that leaves you full and satisfied afterwards. I started making this because Ged, my husband, was looking for a something to snack on that wouldn’t JUST be empty calories. Something that would help fill him up a little but also leave him satisfied. What does he like? Cashews, those will fill him up. What would help get him to pick this over something junky? Chocolate chips definitely. What if we added some marshmallows for some lightweight sweetness and fun? DING, DING, DING, JACKPOT! We have a winner! I’ve been making this for most of the summer and I don’t really see an end in sight. Its really a delightful little Trailmix that will please even your pickiest snacker.

Also you can subsitute any nuts you would like as well as any type of chocolate chip you might like! Shake it up to suit your tastes but this is OUR favorite iteration. Below is how I pack them up and store them in the pantry. Easy to access and pre-packed. Vintage pyrex optional.
- 1 cup roasted cashews
- 1 cup semisweet chocolate chips
- 1 cup mini marshmallows
- Mix all ingredients together and add to portioned bags, we like ½ cup servings.
