This week is just going to be party food week around here! Then again, it really is party food week around here at The Allen Table. We’re baking cookies for the holiday, making snacks for get togethers. Simple things to enjoy with family and friends, after all, isn’t that what this time of year is about? I know it is for us. One thing I ALWAYS make to munch on during this holiday week is Muddy Buddy because its just so effing easy to make and so effing good! A big tin on the counter and its usually gone by the end of the week and is busy being refilled by Friday (ETA its Wednesday and we’re already on batch # 2). The sweet peanut-chocolately coating and the crispy cereal are the best of both worlds.
Additionally, if you’re looking for a few last minute baking items to add to your home-made gift giving rotation this also is wonderful. I am always happy to receive this and gobble it up once the kids are are snug in their beds, dreaming of sugar plums. I hope that you love it as much as we do!
- 9 cups Rice Chex
- 1 cup semisweet chocolate chips
- ½ cup peanut butter
- ¼ cup butter
- 1 teaspoon vanilla
- 1½ cups powdered sugar.
- Into large bowl, measure cereal; set aside.
- In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
- Add powdered sugar. Seal bag; shake until well coated. Store in airtight container.
